Yester Years (continued) ...... Food Preservation

We all know about food preservation and the different ways it is preserved but how many of us are familiar with "POTTING"? Well here is some instruction on this type of food preservation.The potting process was used primarily with meat. ....... The meat would be cooked until done,the fat would be saved, after cooling the meat would be pulled from the bone. It would then be "potted" by placing it into jars or crocs and the fat would be poured onto and around the meat (the fat helped the meat from decomposing) and sealed. Later, cooks would add herbs and spices to the meat or made sausage from it. * The fat was for preservation only so it was drained from the meat before preparation to be served. - Reference source- Food preservation from Wikipedia.
